Easiest, Freshest Summer Salad (raw!)

We ate this salad together at a restaurant in Hoboken and had to recreate it. Luckily, nature did all the work with this one. Remember that seasonal ingredients are the best tasting, carry the highest amount of phytonutrients, and offer the most antioxidants. We used some raw summer faves and threw this together so easily. This would work great as a main dish with a lean protein or as a vibrant side. No cooking, no heating - just delicious + simple.


2 yellow summer squash (diced)

2 cucumbers (diced)

1 cup fresh peas

1/2 cup sheeps feta (diced)

1 lemon (juiced)

s+p to taste


Combine all ingredients in a bowl and toss with olive oil, lemon juice, and add s+p to taste.
